Got a lot of zucchini? Here is a great way to use it up and to make your guac even healthier.

The recipe is super simple, and you don’t have to follow this exactly, just make your guacamole like you usually would then add some sauteed zucchini! I was able to use zucchini from my mom’s garden and got the jalapeno and cilantro from my own garden — always tastes so much better when you can use your home-grown produce!

1 large avocado – about 1 1/2 cups cubes
1 1/2 cups raw zucchini, cubes
1 tbsp olive oil – for quick saute
1/2 tsp pepper
1/2 tsp garlic powder
pinch of sea salt to taste
1/2 cup onion, diced
1/4 cup chopped parsley or cilantro
1/3 cup lemon or lime juice
1 jalapeno, diced – or a few dashes of cayenne (optional)

  1. Saute the zucchini cubes in very hot oil for just about 1-2 minutes. Just to caramelize the edges. Salt to taste.
  2. Toss zucchini with remaining ingredients.

My favorite way to dice an avocado. Cut it in half, criss-cross the flesh with a knife and then scoop it ou with a spoon — perfect little avocado cubes.

Yum. We ended up also adding some black beans to this, which added more great color as well as some protein. We used the leftovers the next night to top our brats with — highly recommend this.
