This is a very quick and simple recipe that you could easily add on to. Serve it with a side of stir fried veggies or an asian-style salad for a healthier dinner than usual chinese takeout.
1/2 pound medium raw shrimp, peeled and deveined
2 tablespoons soy sauce
1 tablespoon sesame oil
2 teaspoons lemon juice
2 garlic cloves, minced
1 tablespoon peanut oil (other oil can be substituted)
1 green onion, sliced
1 tablespoon sesame seeds
Place raw shrimp in a sealable bag or bowl.
Add soy sauce, sesame oil, lemon juice and garlic to the bag and toss. Refrigerate for at least 30 minutes.
Heat the oil in a wok or skillet. add the shrimp and marinade and stir fry until the shrimp turn pink (about 3 minutes).
Serve over brown rice or rice noodles. Top with sesame seeds and green onion.
If you aren’t familiar with rice sticks here is a picture of the brand I used:
They are very thin noodles that are even simpler than regular pasta to cook. You just bring some water to a boil and pour it over the noodles or take the pot off the heat and add the noodles to the boiling water, let them sit for a couple minutes and drain off the water. They have a great texture and it’s good to get variety in what you’re eating, even with types of pasta, so try something new!
