Quinoa Veggie Meatballs

I saw these meatballs a while back on The Small Boston Kitchen blog (http://onceuponasmallbostonkitchen.blogspot.com) and I thought I’d try them out and share them with you. They have a great texture and flavor and are very versatile. I ate them for breakfast with a fried egg on top, for lunch inside a wrap and for dinner on top of a salad. They take a little bit of effort to make, but I encourage you to try them!

Breakfast Really is the Most Important Meal of the Day

Yes, your mom was right, you should eat your breakfast every day. Studies show that eating breakfast regularly has the following benefits:

  • a more nutritionally complete diet
  • improved concentration and performance
  • higher levels of strength and endurance
  • lower levels of cholesterol
  • easier to achieve and maintain a healthy weight

Yes, that’s right, breakfast eaters actually weigh less than their counterparts who routinely skip breakfast. The point here is that achieving and maintaining a healthy weight isn’t all about calories in and calories out. There’s a LOT more to it than that.

Why Your Diet Doesn’t Work… and Ours Does


Weight Watchers, Nutrisystem, Jenny Craig… I’m SURE you’ve heard of them and you probably know someone who has tried one of these weight loss programs. And maybe they succeeded in losing those pounds and maybe they’ve even been able to maintain their goal weight, which is not usually the case. But what about those people who try one of these programs (or maybe even all of them) with minimal or no results? Why do these program seem to work so well for some while others gain the weight right back and still others see no weight loss at all?

What is Comfort Food to You?

When you think of comfort food what comes to mind? A big bowl of mac and cheese with extra cheese? Chicken and dumplings? Warm apple pie with ice cream? According to Webster’s Dictionary, the term comfort food refers to “foods consumed to achieve some level of improved emotional status, whether to relieve negative psychological affect or to increase positive.” You may feel really good while you’re feasting on that fried chicken, but how do you feel an hour later? Probably not so happy anymore and maybe even a little guilty.

Turning to foods to make you happy definitely isn’t the way to go. Instead you should really do something else that you enjoy. BUT if you really are craving some feel good foods, at least consider these options instead of the traditional “comfort foods.” The following choices are healthier foods to incorporate into your daily diet that can boost your mood, bring you more energy, reduce your stress level and even make your smile brighter. Eating fat can make you happier and smarter — but you have to eat the right kind

So what fats are the right kind? First let’s briefly go over the different sources of fats. In our diets we consume saturated fats, unsaturated fats and trans fat.

Saturated fats increase the bad cholesterol, so we want to limit them to no more than 10% of total calories. Saturated fats are found mostly in animal products and some vegetable oils. Food labels will tell how much saturated fat is in a product and you should avoid and limit any products that are high in this type of fat. (more…)

I am 59 years old and struggled with my weight most of my life. I tried the usual—books, diets, groups, supplements—to lose weight; instead, I got heavier and more discouraged. I LOVE macaroni and cheese. Especially the kind that comes in the box with the powdered cheese and butter overload. I love it because I think it tastes great and it is so easy and quick to make. But it definitely isn’t all that great for you. So I’m sharing with you today, a recipe for mac and cheese that I think is just as good (if not better!) than the traditional favorite. This recipe is still very simple and quick, tastes amazing (I love the flavor and texture of quinoa), it uses fresh cheese instead of the powdered kind, it is gluten-free and it had vegetables and a good source of protein!
