Hi! I hope everyone ate everything up from their first boxes! If you tried any delicious recipes please pass them along to us. If you thought you had some strange things in the last box, box #2 is going to be a great adventure. This week in your boxes you have a few familiar faces. You should recognize the salad turnips, chocolate mint and watercress from the first box, and then you should also be able to identify the snow and snap peas as well as the red head lettuce. The rest of the produce is a little less common; you have elderflower blossoms, lemon balm, milkweed buds, sorrel, romanesco leaves, kohlrabi and garlic scapes. Weight Watchers, Nutrisystem, Jenny Craig… I’m SURE you’ve heard of them and you probably know someone who has tried one of these weight loss programs. And maybe they succeeded in losing those pounds and maybe they’ve even been able to maintain their goal weight, which is not usually the case. But what about those people who try one of these programs (or maybe even all of them) with minimal or no results? Why do these program seem to work so well for some while others gain the weight right back and still others see no weight loss at all?

When you think of comfort food what comes to mind? A big bowl of mac and cheese with extra cheese? Chicken and dumplings? Warm apple pie with ice cream? According to Webster’s Dictionary, the term comfort food refers to “foods consumed to achieve some level of improved emotional status, whether to relieve negative psychological affect or to increase positive.” You may feel really good while you’re feasting on that fried chicken, but how do you feel an hour later? Probably not so happy anymore and maybe even a little guilty.
Turning to foods to make you happy definitely isn’t the way to go. Instead you should really do something else that you enjoy. BUT if you really are craving some feel good foods, at least consider these options instead of the traditional “comfort foods.” The following choices are healthier foods to incorporate into your daily diet that can boost your mood, bring you more energy, reduce your stress level and even make your smile brighter. Creamsicles have to be one of my top favorite desserts. So, I was pumped when I found this recipe on Elana’s Pantry. It is really great — has a very good sweet creamy flavor. You’d never know there was a green leafy vegetable hiding in there. This would make a great breakfast smoothie or a tasty 2nd lunch. (more…)

So what fats are the right kind? First let’s briefly go over the different sources of fats. In our diets we consume saturated fats, unsaturated fats and trans fat.
Saturated fats increase the bad cholesterol, so we want to limit them to no more than 10% of total calories. Saturated fats are found mostly in animal products and some vegetable oils. Food labels will tell how much saturated fat is in a product and you should avoid and limit any products that are high in this type of fat. (more…)
