I know it isn’t fall anymore, but I love pumpkin flavored things. And canned pumpkin was on sale recently. So here’s a very simple and tasty recipe for pumpkin spice french toast.
Ingredients
1 cup pumpkin puree (not pumpkin pie filling)
3 eggs
1 cup milk
2 tablespoons maple syrup (or you could use some agave syrup here)
1 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon allspice (you could use other spices for the ginger or allspice here depending on what you have — nutmeg, cloves, pumpkin pie spice etc)
1 teaspoon vanilla

First, whisk all your ingredients together (except the bread). This will make enough for an entire loaf of bread so you might want to scale it down if you don’t have many mouths to feed.
Next dip your bread in the egg mixture on both sides and let it soak up some of the mixture so you get good flavor. Only dip as many slices as you can cook at one time.
Place the dipped slices on the griddle or pan that’s been heated over medium heat. And let them brown on each side. Easy as (pumpkin) pie (french toast)!
